Make lime marmalade: slice limes including the skins, cover with water, simmer until softened, add something to sweeten it if desired eg rice malt syrup, add a couple of tablespoons of chia. Allow it to cool and set a little, the chia will absorb any excess water. Spoon into sterile jars, refrigerate ( or freeze if you don’t think you’ll use it quickly, it has no preservative unless you used sugar as the sweetener). Healthy tangy condiment!
